Alligator tenderloin is the perfect meat for marinating, and there are many ways to cook it.  Some of the preferred techniques are grilling or breading and frying. Most recipes call for Cajun style, but capers, butter and lemon create another delicious, complimentary flavor profile.

Alligator Tenderloins are a great addition to a traditional gumbo recipe as well! We prefer to poach the tenderloins, and let them cool, then shred the meat by hand.  Once the gumbo simmers, we add the meat back in.  Another bonus about this meat is that it's not only tasty and versatile, but virtually fat free and high in protein. You can feel good about enjoying your meal as well!
